Meet hojicha
Hojicha is a Japanese roasted green tea, made by slowly roasting the leaves and stems over charcoal until they turn a deep amber.
While matcha is shade-grown and stone-ground into a bright, grassy powder, hojicha takes the opposite path, roasting mellows the grassiness into something toasty, caramel-like, and gently smoky.
In Japan, it's poured from kettles in family homes and served at the end of meals for its warm, soothing depth. It still carries the antioxidants naturally found in the tea leaf, just in a cozier form.
